Easy Dinners for Busy Moms and Families

In our household there is always some soccer practice or recital and outing going on, so when we get, I need to get dinner on the table pronto! Here are some easy recipe that you can throw together any night of the week.






 Meatloaf 





 1 pound of ground beef

2 tsp Italian seasoning

1/2 tsp salt

1 egg

chopped onions

1/2 cup of breadcrumbs

 Mix all ingredients together and bake at 350 degrees for an hour. Serve with sides of your choice. We like garlic toast or some easy mash potatoes.





Here is something that is super easy and the kids can have fun with since you can personalize each "pizza" for individual tastes. If you like pepperoni, go heavy on the pepperoni, if you like peppers and anchovies, well, you get the point.


 Tortilla Pizzas



Tortillas
1 can of tomato sauce (pasta sauce will work in a pinch)
1 package of mozzarella cheese
toppings of your choice, pepperoni, olives, anchovies


Add sauce, cheese and toppings. Bake for 4-5 minutes or until desired color or crispiness. If you desire, cook the toppings desperately then add in altogether and bake.





 One Dish Pasta and meatballs





2 jars of your favorite pasta sauce
1 pound of ground meat (beef, chicken) seasoned with your fave spices
1 package of pasta
Parmesan cheese (optional)


Using a big pot, stir in the sauces, put on medium to low heat for 10 minutes. Shape seasoned meatballs into the pot and add sausage. Keep on medium heat for 20-25 minutes, stir occasionally. If needed add a little bit of water if sauce gets too thick. Add in your pasta and cover. Check on it from time to time to make sure all pasta is equally being cooked.  Give one last stir, check to make sure meat is properly cooked. Serve and top with Parmesan cheese.
